creamed chicken with vegetable torta

  • 4 Eggs (beaten)
  • Eggplant, 250 grams
  • 1 Garlic cloves
  • Parsley (chopped), 2 table spoons
  • Breadcrumbs
  • Spinach, 500 grams
  • Parmesan Cheese
  • Olive oil, 3 table spoons
  • Onion, 1 table spoon



Cook spinach and drain thoroughly, chop and peel eggplant; slice thinly.

Heat oil in heavy a fry pan.Add eggplant and stir well; cover and cook gently, stirring frequently until just tender, about 8 min.

Combine spinach, eggplant with all other ingredients (allspice,rosemary, oregano, salt, pepper).

Turn into a greased baking dish.

Bake in moderate oven (350 F) for 40 min or until firm.

Cut into squares and serve with creamed chicken.
