  • Finely chopped chives and spring onion leaves, 2 table spoons
  • Lemon juice, 1 table spoon
  • Butter, 2 oz
  • Lamb Cutlets, 4 pieces
  • Freshly ground black pepper



Brush the cutlets with the melted butter and sprinkle well with pepper.

Grill the cutlets under pre-heated grill, basting with butter. Turn once during the cooking.

Put the cutlets onto a hot dish

Add the lemon juice and onion tops and a little salt to the grill pan. Stir the mixture well and pour over the chops
