Wipe the leg of lamb with a damp cloth and season well
Rub the orange rind well into the flesh of the leg
Put the leg into the roasting pan with a small piece of fat on the top
Roast allowing 20 minutes to the lb and 20 minutes over a hot oven 425degrees
15 minutes before the lamb is cooked, add the honey to the pan with any remaining orange rind and mix well with the meat juices and use to baste the meat.
Baste with this frequently during the last 15minutes
