  • Cut the chicken bone out completely and cut into pieces
  • Lightly season with salt and pepper
  • wrap each piece in a very thin streaky bacon, place it in pie dish
  • Add sufficient cold stock to barely cover the chicken
  • Cover with puff pastry and allow to rest in a refrigerator
  • Eggwash and bake at 200 degrees fir about 30 minutes
  • Reduce heat to 160-180 degrees and continue cooking for 1 hour.
