cheese fritters

  • Grated Cheese, 2 oz
  • Cayenne Pepper, 2 dashes
  • Salt, 2 pinches
  • Margarine, 2 oz
  • 2 Eggs
  • Water, 125 milliliters
  • Flour, 60 grams



Bring the water and margarine to boil in a thick bottomed pan.

Remove from heat,then add the flour and mix with a spoon.

Return to gentle heat and mix until the mixture leaves the sides of the pan.

Remove from the heat and let it cool slightly.

Gradually add the eggs, beating well.

Add the cheese and seasoning.

Using a spoon, scoop out the mixture in pieces the sizes of a walnut, place into deep hot fat.

Allow to cook with minimum of handling for approx. 10 min.

Drain and serve on a dish paper on a silver flat.

Sprinkle with grated Parmesan cheese.
