Season the duck inside and out with salt.
Place on its side in a roasting tin.
Cover with the dripping.
Place in hot oven approx. 20-25 min.
Turn on to the other leg.
Cook further for 20-25 min approx.
Baste frequently.
To test if cooked pierce with a fork between the drumstick and thigh and hold over a plate. The juice issuing from the duck should not show any signs of blood.
Prepare roast gravy with the stock and the sediment in the roasting tray.
Serve on a flat silver dish, garnish with picked watercress.
Accompany with a sauce boat of hot apple sauce and a sauce boat of gravy and Game chips.Also serve sauce boat of sage and onion stuffing.
