Cream the fat and sugar until soft and fluffy.
Gradually add the beaten eggs.
Lightly mix in the sieved flour, and baking powder.
Divide into two greased sponge tins.
Bake in a hot oven 230-250 degrees approx. 12-15 min.
Turn out on to a wire rack to cool.
Spread one half with jam and place the other half on top.
Dust with icing sugar.
Serve on a doily on a silver flat.
