Lightly grease four size barquette or tartlet moulds.
Line thinly with pastry.
Prick the bottoms of the paste two or three times with a fork.
Cook in a hot oven at 230-250 degrees or until the pastry is lightly set.
Remove from the oven, press the pastry down if it has tended to rise.
Add the chopped ham and cheese.
Mix the egg, milk, salt and cayenne thoroughly.
Strain into the barguettes.
Return to a moderate oven 230 degrees and bake gently till well browned and set ,approximately 15-20 min.
Serve hot.
