Melt the butter in a small sauteuse.
Add the shallots and cook gently for 2-3 min without color.
Add the mushrooms, cover with a lid, gently cook for 2-3 min.
Strain off the fat ;add the wine and reduce by half.
Add the tomatoes.
Add the demi-glace and simmer for 5-10 min.
Correct the seasoning and add the tarragon and parsley.
Serve with Fried steaks,chops or Chicken.
