Ingredients

  • Vinegar, 60 milliliters
  • Shallots (chopped), 50 grams
  • Chevril, tarragon,parsley (each), 1 pinch
  • Capers (chopped), 10 grams
  • Demi-glace, 250 milliliters
  • Gherkins (chopped), 25 grams

method

Place the vinegar and shallots in a sauce pan and reduce by half.

Add the demi-glace and simmer for 15-20 min.

Add the remaining ingredients.

Skim and correct the seasoning.

Serve with Durham Cutlets.
