1. Assemble all the necessary items needed and ready them.
2. Pre boil the rice in two glasses of water and a generous amount of oil. Stir with a fork and put aside.
3. Bring pan to heat and add oil.
4. Once ready,add the spring onions and cook for about a minute.
5.Add the crushed ginger and garlic and cook for about a minute,before adding the tomato paste.
6. Add the carrots and stir nicely.
Introduce the chopped peppers and cook for about a minute.
7. Add the sweet corn and stir nicely. Toss in the sliced/diced sausages and stir once more.
8. Keep checking the heat to avoid overcooking the food.
9. Introduce the spices,salt and sugar and give the food a generous stir. Cook for another minute while stiring thoroughly and carefully.
10. Serve hot!
