vegetable and bean stew

  • Carrot, 2 pieces
  • Black Pepper, 1 tea spoon
  • Cayenne Pepper, 1 tea spoon
  • Ginger (crushed), 1 tea spoon
  • Pre boiled beans
  • Peppers red, green, yellow (each), 1 piece
  • Crushed garlic, 1 clove
  • Onion, 1 bulb
  • Medium sized tomatoes, 6 pieces
  • Courgette, 1 piece
  • Cucumber (small size), 2 pieces



Wash and roughly chop all the vegetables

Wash the tomatoes, roughly chop them and blend into juice.

Fry the vegetables in a pan, and black pepper, cayenne and salt to taste

Add the crushed ginger and garlic

Add the pre cooked beans, tomato juice and correct the seasoning. allow to cook for 5 min.

Serve hot with baked/boiled rice as the accompaniment
