Wipe the cutlets with a dumb cloth and trim off the excess fat if necessary. pepper the cutlets and ru the orange rind well into the meat.
Pour a little melted butter over each cutlet and put under a hot grill to seal the meat.Turn the cutlets and again pour over a little butter and fold the other side.
Lower the heat and cook for further 10-15 minute depending on thickness, turn once during this time.
Lightly brus the orange slices swith utter aand grill for a few minutes. Remove the orange and the chops and keep hot
Pour of the liquid and make gravy with it, using the cornflour to thicken and adding a teaspoon of orange juice.
Surround with piped mashed potatoes and green peas
Serve the cutlets very hot with a slice of orange on top of each and pour the gravy over.
