stuffed mutura/ mahu (beef-stuffed tripe)

Ingredients

  • Beef (boneless, forequarter), 750 grams
  • Chilli (chopped), 1 piece
  • Oil, 10 milliliters
  • Garlic, 1 tea spoon
  • Blood, 1 cup
  • Onion, 100 grams
  • Salt and pepper, 2 pinches
  • Tripe, 200 grams

Cook onions and garlic, until the onions are golden brown, cool.

Cut the beef into small cubes, mix with blood and add the salt, pepper and chilli.

Place mixture in uncooked tripe, and tie both ends firmly.

GRILL.

Slice to serve...with ugali or githeri
