Put the tomato juice and water into a blender/ Liquidizer. Switch to full speed, slowly add the roughly cut onion, carrot, bacon and tomato
Alternatively put into a pan and simmer until hey are soft, pass through a sieve
Add sugar, seasoning and nutmeg
Put in a atewpan and simmer for 15min
Blend the cornflour with a little water and add into the pan
Cook gently for a few minutes stirring all the time
Stir in 1 tbsp cream and sprinkle with parsley then serve
