  • Thyme, 1 leaf
  • Bay leaves, 1 leaf
  • Demi-glace, 250 milliliters
  • Mignonette Pepper, 1 pinch
  • Shallots (chopped), 50 grams
  • Red wine, 125 milliliters

method

Place the reduction in a small sauteuse.

Allow to boil until reduced to a quarter.

Add the demi-glace.

Simmer for 20-30 minutes and correct the seasoning.

Pass through a strainer.
